Lambsquarters is a member of the goosefoot family, which comprises about 1,500 species found worldwide, typically in desert, saline or alkaline soils. Most members of this family have leaves and seeds that can be eaten, although many have to be processed if they are unpalatable raw.

Description

Lambsquarters is an annual plant that generally grows up to 3 or 4 feet tall; much taller in ideal soils. The leaves are roughly triangular in shape with a white, filmy coating on each leaf that causes water and raindrops to bead up. The leaf shape has been described as similar to a duck’s or goose’s foot—hence another common name, “goosefoot.” The stalks are typically streaked with red, and there is usually a bit of red in the axil of each leaf. The green flowers are inconspicuous.
