Rice biscuits with cardamom

Nan-e berenji

Distinctively flavoured and easy to make!

MAKES 60 BISCUITS

20 cardamom pods, seeds

extracted

½ tsp saffron strands

130g (4½oz) caster sugar, plus 1 tsp

4 free-range egg yolks

3-4 tbsp rose water

125ml (4floz) olive oil

100g (3½oz) unsalted butter, at room temperature

200g (7oz) rice flour

230g (8oz) chickpea (besan) flour

½ tsp sea salt icing sugar, to decorate pistachio slivers and rose petals, to decorate (optional)

1 Using a mortar and pestle, grind together the cardamom seeds, saffron and 1 tsp caster sugar.

2 Beat the egg yolks and sugar in an electric mixer until light and fluffy. Add the rosewater, oil and butter and beat until well amalgamated, then fold in the rice flour, besan, salt and cardamom mixture to form a dough. Cover the bowl and leave to rest in the fridge for 1 hour.

3 Preheat the oven to 150°C/Gas Mark 2. Line a large baking tray with baking paper.

4 Using a teaspoon, scoop out some dough and roll it between your palms to form little balls. Arrange the balls on the tray, pressing down gently on each of them with your thumb. Decorate the centre of each biscuit with a pistachio sliver, if you like, and bake for 25 minutes, or until lightly coloured. Leave to cool on a wire rack, then serve as they are, or dusted with a little icing sugar. Garnish with rose petals.
