Super dough #1

This recipe takes advantage of the reaction between the acid in the starter and the alkaline bicarbonate of soda. The key is creating enough heat to accompany this vigorous reaction, but not using so much that the crumpet or the butter burns. The next most important thing is using plenty of butter on your crumpet ring, or you’ll definitely have very stuck crumpets. Some places sell nonstick versions, but I don’t have them.


200g (7oz) mature white sourdough starter

½ tsp table salt
