You can use fresh or frozen berries. If using frozen, keep them in the freezer until just before you stir them into the batter.


Make this ahead, or to cook right after assembling, cover loosely with foil, and bake 15 minutes. Remove foil, and bake 5–10 minutes more or until bubbly at edges.

Lemon-Raspberry Loaf

This loaf is light and not too sweet— more like a muin in lavour than a cake. Adding a thin layer of plain bater to the botom of the pan means the fruit won’t stick to the botom. Use half whole-wheat lour for added ibre and texture, or sweeten by adding a glaze (see Tip, below). For an extra-lemony loaf, use the zest of two lemons.
