Mild daytime temperatures bring crops of morel mushrooms bursting to life

With honeycombed heads emerging through the forest duff below unfurling ferns, trilliums, and other wildflowers, morels are among the oddest and choicest of May’s ephemeral delights. A coveted delicacy, the vernal mushrooms may sprout sparingly one year and in great profusion the next.

SPRINGTIME HARVESTS There are various species of yellow morels, common in mixed and hardwood forests south of the Canadian Shield, and the earliersprouting black morels, which predominate in much of the rest of the country. All are edible, but apparently not imperilled by collecting, since, like other mushrooms, they’re merely the “fruit” of vast underground laceworks of fungal threads that persist for years.
