“Pickles are important to Romanians, and we have many ways of cooking and eating them. I never pass up a chance to eat gherkins, whether as a snack, a side dish or even in a stew.
When I was growing up in Bucharest, pickling and preserving food was a necessity. Food wasn’t widely available; the shops were full of jars of beetroot and pre-boiled carrots but not much else. At times basic ingredients were rationed, and I remember coming home from school only to go straight out again to wait in a queue for food.
