These recipes aren’t about fad eating - they simply bring you into my kitchen so I can share my favourite everyday recipes with you… It just happens that they’re good for you too. I was brought up in a family where Mum cooked amazingly good food every day from scratch, never cutting corners or taking shortcuts. Our family dining table was where my love of food began. I still believe in the nutritional value of cooking from scratch, and when people ask how I eat so well and stay the same size, my answer is always the same: I just eat healthy food. I’m not a doctor or health specialist, but what I do know is that the food I cook uses a minimum of oil and ghee; that the produce - whether it’s vegetables, fish or chicken - is fresh and that the basic spices are good for you. Follow my lead and you’ll soon be creating flavour-packed meals that, regardless of the odd splash of cream here and there, are healthily balanced. CHETNA MAKAN
