WHAT’S IN IT FOR YOU?
Macadamia nuts are high in fibre and healthy fats. Oily fish like trout and salmon are an excellent source of omega-3s. Fennel and grapes are both high in vitamin C.
KNOW- HOW
Make your own aïoli (search for a recipe at deliciousmagazine. co.uk) or add grated garlic to shop-bought mayonnaise. Check your aioli/mayo is dairy free if it needs to be.
• 70g rocket
• 2 large chicory (white, red or both), trimmed, leaves separated
• 2 baby fennel bulbs (or 1 large), very finely sliced or shaved on a mandoline
• 2 inner stalks celery, sliced, plus a handful of leaves, chopped
• 2 small green apples, sliced into matchsticks
• 350g seedless mixed grapes, halved
