Down in Sussex, a new fine dining spot has opened on Worthing’s Art Deco pier. Tern is the first in an initiative by local hospitality group Perch to foster new restaurants in the area. Headed up by chef Johnny Stanford, the restaurant will use the Southern Pavilion venue (where Perch also runs a café) to establish its produce-led tasting menu concept. Think English peas with lavender and riesling vinegar, or razor clams with elderflower and crème fraîche. Tern will benefit from expert support before moving into Worthing itself in time. Other aspiring restaurateurs will then, in turn, be able to apply to use the pier’s space as their springboard. ternrestaurant.co.uk
