SPICE SKILLS
My family came from Clarendon, a sugar-cane growing area in Jamaica; we were very poor. I was the youngest of six children and grew up with my grandfather and grandma, who was great with spices. They’re so intense in the Caribbean and it takes a lot of skill to get spicing right – use too much scotch bonnet and you have the difference between a great rice and peas and a dish you have to throw away. I never saw my grandma measure anything – it just came naturally from years of cooking.
