FRESH GINGER

FRESH GINGER AND HONEY TEA
Peel a 4cm piece of fresh ginger and slice as thinly as possible. Put in a pan with 400ml water and simmer for 10 minutes. Add lime juice and honey to taste, then serve in a mug.
GINGER & LIME DRESSING
Whisk together 3 tbsp toasted sesame oil, 1 tbsp tamari, 2 tsp grated fresh ginger, 1 crushed garlic clove and the grated zest and juice of 2 limes. Stir into Asian-inspired salads with beansprouts, shredded pak choi and peanuts, then top with crisp pan-fried tofu.
