BRING ON THE sunshine

This month my inspiration comes from warmer climes – Latin America, the Caribbean and Thailand – where the local produce soaks up the plentiful sun to deliver welcome bursts of colour and flavour to the British dinner table. I’ve used hot red chillies that balance perfectly with earthy spices, and zesty citrus to marry with the sweet fragrance of tropical fruit and aromatic herbs… These are ingredients to wake up the palate and warm the soul.
