QUINCE JELLY
TWO-CHEESE TOASTIE
Heat the oven to 180°C/160°C fan/ gas 4 with a baking sheet inside. Butter 4 slices of bread on one side. Put a large frying pan over a medium heat, then (before it gets hot) add 2 of the bread slices, butter-side down. Spread with quince jelly, then top with a mix of crumbled blue cheese and grated cheddar.
Sandwich with the remaining slices of bread, butter-side up. Cook for 4-5 minutes, pressing down on the sandwiches with a spatula/fish slice until toasted on the underside. Flip and cook for 4-5 minutes more. Transfer to the baking sheet and bake in the oven for 5-6 minutes to melt the cheese inside.
