Golden syrup pudding with pistachio crumble
VEGGIE RECIPE
SERVES 6-8. HANDS-ON TIME 25 MIN, OVEN TIME 1 HOUR
• 125g unsalted butter, softened, plus extra for greasing
• 165g caster sugar
• Finely grated zest and juice 1 lemon
• 1 tsp fresh lemon thyme leaves, chopped
• 4 medium free-range eggs, separated
• 100g plain flour
• 250ml unsweetened almond milk
• 300g golden syrup
FOR THE PISTACHIO CRUMBLE
• 60g slightly salted butter, cold and cubed
