During my childhood it was great to be part of two cultures. At school I enjoyed traditional western lunches, but once I entered my home, I was transported into another world: a place full of vibrant colours, flavours, clothes and, of course, curries.
While not all Indian dishes are curries, they are an essential and loved part of the cuisine. A curry is defined as a dish that has a sauce and a harmonious blend of spices and flavours - often lighter, thinner, more fragrant and tastier than the average takeaway version.
