The 10-minute lunch
Courgette & buttermilk salad Whisk 100ml buttermilk, ½ small crushed garlic clove, the grated zest and juice of ½ lemon, a small bunch of chopped fresh mint and 2 tsp poppy seeds in a bowl, then season. Peel 2 courgettes into ribbons with a Y-shape peeler, toss in the dressing and serve sprinkled with crumbled goat’s cheese and a few fresh basil leaves.
