ROAST OF THE MONTH
“To me, knowing and appreciating the aromas and flavours of spices and how to combine them is key to being a chef. Lamb sikandari, a dish that can allegedly be traced back to Alexander the Great, is special to me and I’ve cooked this dish many times. It’s succulent and aromatic in a way that will make your heart melt.”
