I am concerned. Not concerned enough to wake at 4am in a mess of twisted sheets and fright hair, but concerned nonetheless… I’m somewhere between, ‘Will I get a seat on this bus?’ and ‘Is that yogurt off or is it just kefir?’ What’s concerning me is that we aren’t giving plain cakes enough love. In the past decade we’ve all gone baking bonkers, and I fear we’ve lost sight of the delights of the good, plain cake – which, let’s face it, is often the most comforting and delicious of all.
