But they’re actually a good source of potassium, vitamin C and B vitamins. With new potatoes in season, now’s the ideal time to eat them in their healthiest form – with the skin on. Potato skin contains fibre, which is good for the gut and slows down the absorption of sugar, reducing blood sugar spikes.
