Hops give beer its bitterness and much of its aroma, especially those aromas similar to plants or fruit. The depth of spice and the herbal, berry and citrus flavours depend on the variety of the hops as well as the climate and soil – they’re grown mostly in Kent, Herefordshire and Worcestershire. The two best-known British hops, fuggle and golding, have defined the character of British beer for 150 years.
