A lighter take on the traditional cake

THE MASTER RECIPE

Omit the almond decoration before baking and store as in step 6 until ready to decorate. The decorated cake will keep in a tin for up to 2 weeks. Search ‘decorate Christmas cake’ at deliciousmagazine.co.uk for lots of ideas. The hazelnut marzipan overleaf would also work (on top, un-iced) - use the trimmings to decorate.

★ Any combination of sultanas, currants, raisins, mixed peel, dried cranberries, blueberries and dried cherries will work, as long as the overall weight is 500g.
