I come from a little village in County Laois, called Cullohill, the eldest of nine children. My mother loved to cook and knew how deeply important it was to feed us well: food was what kept us healthy, food was our medicine. With nine of us there was constant cooking going on. When we ran in from school there was always something bubbling on the stove or a tray of scones coming out of the Aga. You’d finish tidying up from one meal, and then it was time to start the next!
