Elaine Rémy was inspired by the baking exploits of her mother to re-create Vie’s Jamaican Rum Cakes, which come in six flavours, plus three gluten-free versions. The boozy cakes are full of fruit, and spiced to just the right level, with the Divine cake the rummiest.
