Michele Platman I always use one more clove than indicated in the recipe and if the cloves are tiny, I double the amount. My late mum hated it. I’ll never forget the meal my then-boyfriend and I cooked in her tiny kitchen – poulet aux 40 gousses d’ail. We had omitted to read that we should have left the garlic cloves unpeeled (so the flesh softened in the skins and it could be squeezed all over the chicken). We ended up with 40 dried-up cooked cloves and her flat reeked for days, but the chicken was wonderful.
Nicola Ireland I often add more than a recipe says – we all love it! My neighbour once messaged to ask “What is a garlic clove? That’s the whole thing isn’t it?” She asked me AFTER she’d used 10 bulbs in a recipe! I often use a spoonful of ‘lazy’ garlic but also add unpeeled cloves to oven dishes.
