“This Dutch appeltaart made an appearance at every birthday or celebration I can remember throughout my childhood. The aroma of the soft, tender pastry encasing a wonderful filling of apples, cinnamon and raisins makes me think of all of my family and friends crowded around the table, laughing, smiling and going back for seconds.
The recipe was passed down to me by my Dutch grandma Hetty who, in turn, received the recipe from her own great-grandmother. It’s a proper through-the-generations, time-tested family dish.
When I was diagnosed with coeliac disease and other food intolerances, including dairy, grains and eggs, my life was turned upside-down. I thought I’d never indulge in a piece of the buttery, cinnamonlaced tart ever again… But my family agree that my perfected new version, after months of testing, tastes uncannily like my granny’s original.
