Chinese chicken

Serves 2 | Prep 10 mins |

Cook 35-40 mins | Calories 696 (per serving)

3 tsp ginger purée

3 tsp garlic purée

2 star anise

150ml (5floz)

medium dry sherry

or Chinese rice wine

2 tbsp coconut

aminos or tamari

1 tsp sesame oil

2 tsp honey

½ tsp finely chopped

red chilli or red chilli

flakes (optional)

4 chicken thighs or

drumsticks

brown basmati egg

fried rice, to serve

steamed vegetables,

to serve

spring onions and

toasted cashew nuts

(optional)

1 Preheat the oven to 180ºC/Gas Mark 4. In a large bowl, whisk together the ginger, garlic, star anise, sherry or rice wine, coconut aminos or tamari, sesame oil, honey and chilli, if using. Place the chicken portions in an ovenproof sauté pan or a large frying pan. Pour the marinade over the chicken and bring to the boil.

2 Bake in the oven for 35-40 minutes, basting and turning the chicken halfway through.

3 Once the chicken is cooked, remove from the oven and serve with preprepared, microwave steamed rice and vegetables. Garnish with sliced salad onions and toasted cashew nuts, if desired.
