Stuffed, noodled, fried or bulking out a curry, the courgette is the flavour of the month – literally!


The courgette (zucchini in American English) is a summer squash, of Mesoamerican origin, which can reach nearly 1 metre (100cm (39in)) in length, but is usually harvested when still immature at about 15-25cm (6-10in). In the UK, Ireland, New Zealand, Malaysia and Singapore, a fully-grown, matured courgette is referred to as a marrow. Courgette has a delicate flavour and requires little more than quick cooking with butter or olive oil, with or without fresh herbs.The skin is left in place. As of 2014, the world record for the longest courgette measures 2.52 metres (99in)!
