Lasagne gratin

Serves 4 | Prep 15 mins | Cook 50 mins | Calories 695 (per serving)

3 tbsp butter

3 tbsp gluten-free plain flour mix

750ml (26floz) milk a pinch of freshly grated nutmeg

2 free-range egg yolks

120g (4oz) cream cheese

300g (11oz) cooked ham, diced

12 gluten-free lasagne sheets

80g (3oz) Parmesan, grated a small handful of flat-leaf parsley, finely chopped salt and freshly ground black pepper

1 Preheat the oven to 190°C/Gas Mark 5.

2 Melt the butter in a saucepan set over a moderate heat. Sprinkle over the flour mix and whisk well to make a roux. Cook until pale golden, about 2-3 minutes.

3 Whisk in the milk in a slow, steady stream until incorporated. Bring to a simmer and cook until slightly thickened, whisking constantly, about 5 minutes.
