Spaghetti and meatballs in pomodoro sauce

Spaghetti and meatballs in pomodoro sauce prep 15 min cook 25 min serves 4

400g lean beef mince

1tsp fennel seeds, crushed

Large pinch chilli flakes

1tsp olive oil

1 small onion, finely chopped

2 garlic cloves, finely chopped

1 carrot, grated or julienned

1 courgette, grated or julienned

400g can no added salt passata

400g can no added salt chopped tomatoes

Handful fresh basil leaves, roughly chopped, plus extra to garnish 300g wholewheat spaghetti 40g reduced-fat mature cheddar, grated, to serve

1 In a bowl, mix the mince with the fennel seeds and chilli, season with black pepper and roll into 16–20 small balls.
