The healthy cook’s MICHELIN-STAR MENU

A new study has revealed the top 10 ingredients used by restaurants with two or three Michelin stars. Here’s how to use them at home…

CHOCOLATE Blend dates, ground almonds and a little orange zest and juice. Roll into truffles, dip into melted 85% chocolate, top each with an almond and chill until set.

POTATOES Make healthier hasselbacks by cutting slices into scrubbed new potatoes across the width at 3mm intervals, without cutting all the way through. Brush with a mix of olive oil, garlic and chopped herbs and roast until cooked through and crispy. For sweet potato hasselbacks, see our recipe on p58.
