CAPRESE SALAD 409kcal
Arrange 2 large sliced tomatoes, 75g (½ large ball) sliced mozzarella and fresh basil on a plate. Drizzle over 1tsp each olive oil and balsamic vinegar. Serve with 1 slice sourdough toast
TUNA SALAD 380kcal
Boil 150g new potatoes, drain, cool and quarter. Mix with 150g drained tuna canned in oil, 1 diced tomato and chopped fresh parsley. Serve on crisp lettuce leaves, drizzled with balsamic vinegar
MEXICAN WRAP 399kcal
Crush 200g drained canned kidney beans with a dash of tabasco and chopped fresh parsley. Spread a tortilla wrap with 1tbsp reduced-fat hummus, pile on the beans and roll up
CANNELLINI BEAN SOUP 400kcal
In a pan simmer 150g drained canned cannellini beans in 300ml reducedsalt vegetable stock for 5 min. Remove ½ the beans and whiz to a purée, then return to the pan. In another pan, heat 1tsp olive oil with 1 diced tomato and 1 crushed garlic clove for 5 min. Add to the beans with fresh parsley and black pepper and heat. Serve with 1 slice sourdough bread. Follow with 2 satsumas
