Cajun chicken jambalaya

PREP 10 MIN COOK 15 MIN SERVES 4

GLUTEN FREE • DAIRY FREE

Spray olive oil

400g chicken breast, sliced

1 red onion, chopped

1 red pepper, diced

1 yellow pepper, diced

3 medium tomatoes, diced

2 x 250g pouches ready to heat brown rice

2tsp gluten-free cajun or creole spice mix

70g rocket

Juice ½ lemon

1 Spray a large non-stick frying pan with olive oil and set it over a mediumhigh heat. Cook the chicken for 6–7 min until golden. Remove from the pan, cover to keep warm and set aside.
