The ‘CarbScale’ diet has been devised by Jenny Phillips to allow you to eat to meet your individual needs rather than following a one-size-fits-all formula to determine your target level of carbohydrates

The CarbScale diet restricts high-GI foods, such as grains, cereals, starchy vegetables and some fruits that digest down into rather surprising amounts of sugar (see previous page) and, of course, sugar itself. Instead, it emphasises foods that are rich in protein and healthy fats, as well as low-GI fruit and green, leafy and salad vegetables.
