Salad for the soul kolifa

Theo says: ‘This delicious salad is inspired by kolifa, a symbolic and decorated dish served during a mnimosino in the Greek Orthodox church. Mnimosino is a memorial service for loved ones who have passed. Paying homage to the headline ingredients of wheat berries, pomegranate seeds, raisins, almonds and sesame seeds, every family makes their own version of this dish.’

Serves 6-8 as meze

160g wheat berries

40g each of white and black quinoa

2 tbsp sesame seeds

3 spring onions, finely sliced, including green parts
