One of the oldest cultivated crops and a favourite of fussy kids, peas are probably a staple in your freezer. And now is the time to opt for fresh – be that from a greengrocer or your own garden (peas are very easy to grow). Cheap and versatile, their sweet flavour and pleasing pop make peas the ultimate summer veg. But don’t take our word for it – peas have an impressive nutritional profile. Actually seeds from the legume family, peas are a starchy vegetable thanks to their complex carb content. They’re low in calories and contain just about every vitamin and mineral you need. Peas are one of the best plant-based protein sources, which together with a high fibre content, helps to slow digestion and promote a feeling of fullness. Despite being sweet, peas support healthy blood sugar thanks to a low glycaemic index, and are rich in vitamin K, which may protect against cancer.
