Pak choi is easy to grow and for best results it needs to be grown fast without any checks in growth. It needs a fertile, moist soil for speedy growth, so be prepared to water in dry weather. Seeds can be sown thinly in rows and the seedlings thinned out to 10cm (4in) apart to grow on, or you can start it off in plug trays and transplant the young plants into the garden, taking care not to disturb the roots when planting out. Ideally, sow little and often to give you a steady supply of this delicious vegetable through the summer and into autumn. Seeds sown now will give you tender pak choi ready for harvesting at the end of September.
