Greek courgette tomato fritters
GREEK COURGETTE TOMATO FRITTERS WITH FRESH HERBS
Serves: 4-6
• 450g 1 (1lb) packet firm tofu, squeezed to remove extra water, then crumbled
• 30g (¼ cup) ground walnuts
• 1 clove garlic, minced
• 3 tbsp fresh lemon juice
• 1 tbsp tomato paste
• 2 tsp dried oregano
• 1 tsp salt
• Generous pinch of freshly ground black pepper
• 100g (½ cup) vegan bread crumbs, plus an additional 100g (⅓ cup) for coating
• 7g (¼ cup) chopped fresh dill
• 7g (¼ cup) chopped fresh mint
