This tortilla is marginally different to the pan-cooked one, especially served with the chermoula – a surefire way to add extra oomph to the morning! Eggs provide all eight essential amino acids and valuable amounts of vitamins and minerals.


● Butter, for greasing ● 8 eggs ● 3 00g cooked new potatoes in their skins, cubed ● 1 50g roasted red peppers from a jar, drained, patted dry and roughly chopped ● Grilled tomatoes, to serve


L arge handful chopped basil leaves ● H andful chopped flat-leaf parsley ● 1 small garlic clove, finely chopped ● 1 medium-sized green chilli, deseeded and chopped ● Juice of 1 lemon ● 2 tbsp extra virgin olive oil

1 Line the base of the slow-cooker pot with parchment paper. To make the tortilla easier to lift out, roll two long pieces of parchment paper into 2.5cm-wide strips to form two handles. Place the strips under the base lining and up the sides so they hang over the top of the pot. (If you have a light slow-cooker pot, this step may not be necessary as the tortilla can simply be turned out onto a plate.) Grease the sides of the pot with butter.
