PAN-FRIED PLUM AND AVOCADO SALAD

INGREDIENTS
• 120g (4¼oz) mixed salad leaves
• ½ red onion, thinly sliced
• 8 baby plum or cherry tomatoes, halved
• ½ cucumber, diced
• 1 ripe avocado, diced
• 1 tbsp lemon juice
• pinch of sea salt
• 4 ripe plums, halved and stoned
• 1 tbsp rapeseed oil
• 1 tbsp soft brown sugar
• dressing of your choice, optional
METHOD
1 In a large mixing bowl, put the salad leaves, red onion, tomatoes and cucumber.
2 Mix the diced avocado with the lemon juice and put that in the salad bowl as well. Then season with a pinch of sea salt and mix the salad together.
3 At this point, you can use any dressing of your choice to mix in with the salad.
4 Heat the oil in a frying pan and fry the plums for about 3 minutes, turning with cooking tongs, until starting to soften and brown.
