Have fun cooking with this versatile collection of dishes

• 175g (6oz) red quinoa, rinsed

• 470ml (16floz) water

• 1 tbsp coconut oil

• 392g (14oz) extra-firm tofu, pressed, drained and cubed

• Kosher salt and freshly ground black pepper

• 1 medium head of broccoli, cut into florets

• 177ml (6floz) vegan guacamole

• 12 thick asparagus spears, ends trimmed and shaved into ribbons

• 168g (6oz) snap peas, halved

• bean sprouts

• hemp seeds


1 Combine the quinoa, water and a generous pinch of salt in a medium saucepan. Bring to a boil, then cover, reduce the heat to low, and simmer for about 15 minutes until tender. Remove from the heat, cover with a lid, and steam for about 5 minutes.

2 Heat the oil in a large skillet over medium-high heat until shimmering. Add the tofu, season with salt and pepper, and cook until the bottom is lightly browned and crisp, about 2 minutes. Flip and continue cooking until all sides are browned.

3 In the meantime, steam the broccoli.

4 To serve, stir a spoonful of the guacamole into the quinoa, then divide among bowls. Top with tofu, broccoli, asparagus, snap peas and bean sprouts. Drizzle with the remaining guacamole and sprinkle with hemp seeds.


Get a head-start by cooking the quinoa and tofu and steaming the broccoli a day in advance, then reheat just before serving.
