Low-calorie cooking spray
200g lean ham (visible fat removed), cut into small pieces
6 frozen Slimming World Syn-free
Pork Sausages, defrosted and roughly chopped
8 baby leeks, sliced
300g potatoes, peeled and cut into 1cm cubes
2 red peppers, deseeded and diced
2 skinless and boneless chicken breasts, cut into small pieces
1 level tbsp wholegrain mustard
2 tsp crushed garlic
8 tbsp chopped fresh flat-leaf parsley
300ml chicken stock
4 large eggs
1 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a high heat. Fry the ham, sausages, leeks, potatoes, peppers and chicken for 4-5 minutes, or until everything’s lightly browned.
2 Mix together the mustard, garlic, parsley and stock and pour over the hash mixture. Season well, reduce the heat to medium and cook for 15 minutes, stirring regularly. Increase the heat to high and cook for a further 2-3 minutes, or until the vegetables are tender.
3 Meanwhile, spray another non-stick frying pan with low-calorie cooking spray and place over a medium heat. Crack in the eggs and cook to your liking. Divide the hash between 4 plates and top each with a fried egg.
