Apple & blackberry crumbles
For added warmth, we’ve spiked our crumble with a little spice
SUPER SIMPLE
Serves 4
V
Ready in about 30 minutes
2 large eating apples, peeled, cored and cut into small chunks
200g fresh or frozen blackberries
Finely grated zest and juice of 1 small orange
1 level tbsp sweetener
1 tsp ground cinnamon
Fat-free natural yogurt, to serve
For the topping:
2 level tbsp low-fat spread
1 level tbsp sweetener
¼ tsp mixed spice
50g plain flour
1 Preheat your oven to 180°C/ fan 160°C/gas 4. Put the apples, blackberries and orange zest and juice in a large bowl and toss together to combine. Sprinkle over the sweetener and cinnamon and mix well.
2 Divide the mixture between 4 individual ovenproof dishes or ramekins and cook for 10-12 minutes.
3 Meanwhile, for the topping, put all the ingredients in a bowl. Rub together with your fingertips until the mixture resembles breadcrumbs.
4 Remove the fruit from the oven, then sprinkle a quarter of the crumb topping over each and cook for a further 10-12 minutes, or until lightly golden. Serve with a dollop of fat-free natural yogurt.
