1 large red onion, cut into 8 wedges
1 red, 1 yellow and 1 orange pepper, deseeded and cut into bite-size pieces
1 large courgette, cut into bite-size pieces
4 garlic cloves, finely chopped
1 tsp each of dried basil, thyme and rosemary (or use 3 tsp dried mixed herbs)
1-2 tsp dried red chilli flakes
3 tbsp balsamic vinegar
Low-calorie cooking spray
Salt and freshly ground black pepper
