4 tbsp finely chopped fresh mint leaves, plus sprigs to decorate
4 level tsp sweetener
Few drops of green food colouring
3 x 175g pots Müllerlight Vanilla yogurt
50g white chocolate, broken into small pieces
1 large egg white*
Few drops of vanilla extract
1 Mix together the chopped mint, 2 level tsp of the sweetener, food colouring and 2 pots of yogurt in a bowl until well combined. Divide between 4 dessert glasses and freeze until needed.
2 Melt the white chocolate in a heatproof bowl set over a pan of gently simmering water, ensuring the bowl doesn’t touch the water.
3 Meanwhile, put the egg white in a clean glass bowl and beat with an electric hand whisk on a medium speed until it forms stiff peaks. Whisk in the vanilla, melted chocolate and remaining yogurt.
4 Divide the mixture between the dessert glasses and freeze for a further 20-30 minutes. Decorate with mint sprigs to serve.
