Golden Swiss

Re-creating Swiss in dairy-free form was tricky! Capturing the subtlety of the nutty, mildly sweet, but flavourful combination – and making it melty, too – took time and experimentation. There are a lot of ingredients that contribute to those subtle notes, but it wasn’t until I added maple syrup that I hit the eureka moment.

Makes about 500g (1lb 2oz) | Prep 15 mins plus chilling | Cook 15 mins | Calories 188 (per 100g)

300g (10oz) cooked, drained and mashed caulifl ower

150g (5oz) peeled, cooked, drained and mashed potato

3 tbsp tapioca starch

3 tbsp refi ned coconut oil or

avocado oil

2 tbsp tahini paste

1 tbsp maple syrup
