Savoury pancakes with garlicky mushrooms

Serves 2 | Prep 10 mins | Cook 20 mins | Calories 445 (per serving)


100g (3½oz) plain fl our

200ml (7fl oz) unsweetened soya milk, chilled

a generous pinch of fine sea salt

6 tbsp sunfl ower oil


1 tbsp sunfl ower oil

200g (7oz) button mushrooms, some sliced, some whole

3 garlic cloves, peeled and fi nely sliced

6 tbsp soya single cream

a small handful of fl at-leaf parsley, fi nely chopped

a generous pinch of sea salt and black pepper

1 Start by making the pancakes. Whisk together the flour, soya milk and sea salt in a bowl until smooth.

2 Heat 1 tbsp oil in a frying pan over a medium heat. Test if the oil is hot by adding a drop of pancake batter to the pan: if it sizzles and becomes golden within 30 seconds, it is at optimum temperature. Add 4 tbsp of the batter to make one pancake and swirl the batter around the pan to coat the base evenly.

3 When the pancake is golden after 2-3 minutes, carefully flip it over to cook the other side. Drain on kitchen paper, then keep warm in the oven while you continue to cook the other pancakes, using 1 tbsp of the oil each time.

4 For the mushrooms, heat the oil in a separate frying pan over a mediumhigh heat and cook the mushrooms for 5 minutes, stirring frequently.
