3 ways with... blood oranges
• Special occasion coming up? instead of the usual orange mimosa, try a ruby-tinted version by pouring 3 tablespoons of freshly-squeezed blood orange juice into a glass and topping up with Champagne.
• Blood oranges work very well with fennel and beetroot – try segments in a salad with shavings of fennel, slices of roasted beetroot, and some bitter salad leaves such as radicchio or endive. Scatter with fresh herbs and pomegranate seeds, and dress with a little olive oil shaken with orange juice and zest, a pinch of salt, and a little sugar if needed.
