The mindful kitchen

Heather Thomas, is the founder of The Mindful Kitchen, a sustainable workshop and eatery based in Copenhagen, Denmark. But you can still take inspiration from her work, no matter where you are in the world, by cooking up some recipes from her new book of the same name. Heather’s unique approach to living – and cooking – focusses on supporting nature by eating more local, organically produced plant-based foods, and wasting less of them. Seasonal ingredients are the rule of thumb, creating her signature eco-friendly cooking that’ll nourish, without costing the Earth. After all, what could be better than enjoying delicious food and helping the environment?
