The phrase ‘as easy as pie’ doesn’t really reflect the intricate creations of Calum Franklin, executive chef of the Holborn Dining Rooms in London. Check out his Instagram feed for lacy, geometric works of art that transcend the usual stodgy image of pies. We’re not saying that after 2½ hours of tuition it’s possible to match his skills, but it does teach how to make some simpler pastry masterpieces.
