"My best-known pie came about when I was asked to create a dish that would represent the town of Merthyr Tydfil in South Wales. Many of the town’s businesses, especially the restaurants and cafés, have Italian names, and I discovered there’d been migration from Italy to Wales in the 19th century during the Industrial Revolution. Times were hard for the immigrants; pay was low and mouths needed to be fed. Bread, though, was readily available (albeit a day or two old) and the tougher, less desirable cuts of meat were just about affordable.
